Mexican Meatball Soup

What You'll Need

    For the meatballs:

  • 1 lb. lean ground beef
  • 2 garlic cloves, minced
  • ¼ cup raw white rice
  • 1 teaspoon ground cumin
  • 1 teaspoons dried oregano
  • ¼ cup chopped fresh parsley
  • 1 egg, beaten
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • For the soup:

  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 garlic cloves, minced
  • 1 carrot, peeled and cut into ½-inch pieces
  • 2 stalks celery, cut in chunks
  • 2 potatoes, peeled and chopped small cubes
  • 3 cups chicken broth (I usually use fat-free and low sodium)
  • 3 cups water
  • 1 can (14.5 oz) diced tomatoes with juice
  • ½ teaspoon died oregano
  • ¼ teaspoon ground cumin
  • 1 cup chopped zucchini
  • 1 tablespoon lemon juice
  • salt and pepper, to taste
  • fresh parsley, for garnish

How to Make It

  1. Mix all the meatball ingredients together in a large bowl. Using wet hands, shape the meat mixture into 1-inch meatballs by rolling it between your hands until it forms a ball. This should make about 35 meatballs, depending on how big you make them. Keep them in the refrigerator until ready to add to the soup.
  2. In a large, heavy pot, heat the olive oil over medium heat. Add onions and cook until softened, about 2-3 minutes. Add the garlic, chopped carrots, celery, and potatoes and cook, stirring frequently, for about 5 minutes, or until they start to soften. Pour in the chicken broth, water and can of tomatoes. Stir in oregano and cumin. Bring to a boil over high heat, then reduce heat to medium-low, cover, and let simmer for about 5 minutes.
  3. Add the meatballs to the simmering soup, one at a time. Stir very gently, to avoid breaking apart the meatballs. Cover and simmer over medium-low heat for another 10 minutes. Stir in zucchini and cook, until soft, about 10 minutes. Stir in the lemon juice, and season with salt and pepper, to taste. Serve.
  4. Garnish with chopped fresh parsley.

Buckeye Graham Crackers

What You'll Need

  • One half cups creamy peanut butter
  • One half cup butter, softened
  • Two half cups powdered sugar
  • twelve graham crackers, (approximately One half sleeves, or half a regular-sized box)
  • Three cups semi-sweet chocolate chips
  • two tablespoons shortening, or coconut oil
  • For the Peanut Butter Drizzle:

  • One half cup peanut butter chips
  • One teaspoon shortening, or coconut oil

How to Make It

  1. Line two jelly roll pans with parchment paper, and set wire racks on top of the parchment paper.
  2. In a large mixing bowl, combine peanut butter and butter.
  3. Mix until smooth and creamy.
  4. Gradually add powdered sugar, and mix until well-blended and smooth.
  5. Roll the peanut butter mixture into balls slightly larger than 1-inch.
  6. Place 1 ball on half a sheet of graham cracker.
  7. On a flat surface, carefully flatten the peanut butter ball over the graham, spreading it to the edges, and smoothing and leveling the top. Just make sure not to crack the graham cracker.
  8. I only broke one, but still a good rule of thumb to be somewhat gentle! Repeat for all crackers.
  9. In a large saucepan over low-medium heat, melt the chocolate chips and shortening. Gently whisk until smooth.
  10. Allow to cool for about 5-7 minutes so that it won't burn your fingers if you come into contact with it.
  11. Using tongs, carefully grasp the edges of the graham cracker, and hold the graham cracker with the peanut butter layer facing down.

CHOCOLATE COVERED CHERRY FUDGE

What You'll Need

  • 14 ounce can of Sweetened Condensed Milk
  • 11.5 ounces of Chocolate Chips
  • One jar Maraschino Cherries (approximately 24 cherries)

How to Make It

  1. Drain the cherries and blot dry with a paper towel. Get the cherries as dry as you can.
  2. Slice the cherries in half and set aside.
  3. Prepare a 9x9 baking pan by placing parchment paper inside, or greasing really well. (I do recommend parchment paper as it makes removing the fudge so much easier!) Set aside.
  4. Pour the sweetened condensed milk into a medium size saucepan and heat over medium heat.
  5. Once slightly heated (not boiling) add in the chocolate chips.
  6. Stir while the chocolate melts into the milk approximately 3-5 minutes. Again, do not bring to a boil.
  7. Once chocolate is fully melted and mixture is smooth, add in half of the cherries and stir to combine.
  8. Pour into the prepared baking pan.
  9. Place the remaining cherries on top of the fudge mixture slightly pressing them into the fudge.
  10. Place the pan uncovered into the refrigerator to cool and harden.
  11. Allow to cool for at least 3 hours.
  12. I left mine overnight.
  13. Once hardened remove from the pan, slice, and store in a covered container in the fridge until ready to serve.
  14. Enjoy!

CHOCOLATE COVERED CHERRIES

What You'll Need

  • 16 ounces of melting chocolate
  • Four tablespoons butter (room temperature)
  • Four teaspoons of milk
  • One half teaspoon of vanilla extract
  • One jar maraschino cherries
  • Two cups powdered sugar

How to Make It

  1. Drain the juice from the cherries and set the cherries on a paper towel and blot them as dry as you can. Set aside.
  2. In a small bowl mix the powdered sugar and the butter together.
  3. The mixture will seem slightly dry. Add in the milk and vanilla extract.
  4. Stir to combine. The mixture will be slightly sticky.
  5. Set up a bowl with a small amount of powdered sugar to the side.
  6. Take a small amount of the sugar mixture and flatten it out into a disc shape, slightly larger than a quarter coin.
  7. Take one of the cherries and place it in the center of the disc and mold the sugar mixture around the cherry, sprinkle a little bit of the extra powdered sugar on, which will make it less sticky, and roll into a nice round ball with your hands. Set onto a cookie sheet that is lined with wax paper.
  8. Repeat this with all the cherries. Once completed place the cookie sheet with the cherries into the refrigerator. Allow them to cool for at least 30 minutes, no more than 2-3 hours.
  9. Melt the chocolate according to instructions.
  10. Remove the sugar coated cherries from the fridge and one by one dip them into the chocolate.
  11. I found the best method is to dip them in with a fork and then tap the bottom of the fork on the side of the container to shake the excess chocolate off.
  12. Place the chocolate covered cherry back onto the cookie sheet lined with wax paper.
  13. Repeat this with all the cherries.
  14. Once finished, place the cookie sheet back in the fridge and allow the chocolate to cool and set.
  15. At least 30 minutes.
  16. Keep chilled in a sealed container and enjoy!

Five-Minute Carrot Cake for One !

What You'll Need

  • 1/4 cup spelt flour (or white flour, or Arrowhead Mills gf)
  • 1/2 tsp cinnamon
  • 1/8 tsp pumpkin pie spice (optional)
  • 1/4 tsp baking powder
  • 1/8 tsp baking soda
  • 1/8 tsp salt
  • 1/2 “egg” of choice (I used 1/2 tsp ener-g, but 2 tsp flaxmeal would also work. If you must, you can omit completely. It just won’t rise as well.)
  • 1.5 tablespoons xylitol or brown sugar (coconut or white sugar will also work)
  • 1 packet NuNaturals stevia (or 1 more tablespoon sugar or xylitol)
  • 1/3 cup canned carrots, drained (or steamed carrots, peeled) (for a variation, sub with 1/4c pureed pumpkin) (60g)
  • 1 tablespoon milk of choice
  • 1 tablespoon oil or more milk of choice
  • 1/4 tsp pure vanilla extract

How to Make It

  1. In a small bowl, mix dry ingredients (not carrots). If you have a blender (or Magic Bullet), mix all wet ingredients and blend. (Option for those without a blender: simply fork-mash the carrots very well before combining with the other wet ingredients.) Then mix dry into wet and stir. Pour into greased ramekins, a little dish, or a mug. (I used two 1/2-cup ramekins.) If using the microwave, cook for 1 minute 20 seconds (or more or less, depending on the strength of your microwave). Or you can cook this in the oven at 350F for around 15 minutes. Let cool before trying to pop out. Serves 1-2.

Caramel Apple Trifles-Recipe

What You'll Need

    Cinnamon Whipped Cream:

  • 1 cups whipping cream
  • 1 tsp ground cinnamon
  • 1/2 cup powdered sugar
  • 1 cup Cinnamon Granola (I used this one)
  • Cinnamon Apples:

  • 1 tbsp butter
  • 1/8 tsp nutmeg
  • 2 tsp cinnamon
  • 2 tsp lemon juice
  • 3 apples, diced
  • 6 tbsp brown sugar
  • Caramel Sauce:

  • 1/2 cup sugar
  • 1/4 cup heavy cream, room temperature
  • 3 tbsp salted butter, cubed, room temperature

How to Make It

  1. To make the caramel, add the sugar in an even layer to the bottom of a medium saucepan.
  2. Heat sugar on medium-high and whisk until the sugar has melted, about 5 minutes. The sugar will lump together, but eventually melt.
  3. Continue whisking until the temperature reaches 350 degrees or the sugar has turned an amber color. It will reach 350 degrees very quickly after all the sugar has melted. Watch it very closely. It goes from nice caramel to burned very quickly.
  4. Remove caramel from heat and add butter. Whisk until melted and combined. Mixture might bubble a bit.
  5. Add the heavy cream and whisk until incorporated.
  6. Cool caramel to room temperature.
  7. To make the apples, combine apples, lemon juice, nutmeg, cinnamon and brown sugar in a medium pan and toss to coat.
  8. Add butter and cook apples for about 15-20 minutes, or until at preferred softness.
  9. Allow to cool for 15-20 minutes.
  10. To make cinnamon whipped cream, freeze a metal bowl and whisk attachment for 10-15 minutes.
  11. Remove bowl from freezer, add heavy whipping cream, and whip on high speed until it begins to thicken.
  12. Add powdered sugar and cinnamon and whip until it you get stiff peaks.
  13. Once everything is made a ready, build the trifles.
  14. Pipe an even layer of whipped cream into the bottom of the cup or jar you are using.
  15. Add about 2 tbsp granola in an even layer.
  16. Drizzle caramel over granola.
  17. Spoon apples over caramel.
  18. Repeat layers 14-17, then drizzle more caramel over the tops of each trifle.
  19. Store in the fridge for 2-3 hours, or until ready to serve.

Cheese and Garlic Crack Bread

What You'll Need

    Garlic Butter:

  • 1 crusty loaf, preferably sourdough or Vienna
  • 1 tbsp fresh parsley, finely chopped
  • 100g/3.5oz unsalted butter, softened
  • 2 garlic cloves, minced
  • 3/4 cup shredded Mozzarella cheese (or other melting cheese)
  • 3/8 tsp salt

How to Make It

  1. Preheat the oven to 180C/350F.
  2. Melt butter and then mix in other Garlic Butter ingredients.
  3. Cut the bread on a diagonal into 2cm/1" diamonds but do not cut all the way through the bread (just like you would cut a french stick for garlic bread).
  4. Use your fingers or a knife to pry open each crack and drizzle in a teaspoon of butter and stuff in a pinch of cheese. This might sound like a bit of an effort, but I promise you it is worth it! You don't need to be super neat, it's nice to have some of the butter drizzled over the crust.
  5. Wrap with foil and bake for 15minutes until the cheese has mostly melted, then unwrap and bake for 5 minutes more to make the bread nice and crusty.
  6. Serve immediately.

Million Dollar Spaghetti

What You'll Need

  • 1/2 – 3/4 lb. of Ground Beef
  • 1 can of Spaghetti Sauce
  • 8 oz of Cream Cheese
  • 1/4 cup of Sour Cream
  • 1/2 cup Parmesean Cheese
  • Splash of milk
  • Whole Stick of Butter
  • 8 oz. of Noodles
  • Shredded Cheddar Cheese

How to Make It

  1. Ok, so first things first, preheat the oven to 350. Brown the hamburger meat, drain and add the spaghetti sauce. (You could use your own homemade spaghetti sauce here, too.) Let that simmer and boil your noodles. While your noodles are boiling, use an electric – or if you are so lucky – a stand mixer to mix the cream cheese, sour cream, parmesean cheese and milk. I say a splash of milk because I was not exacting — I just wanted the cheese mixture to be thick, but somewhat pourable. <—- is that word? Anyway, just make sure you mix it really well. Then cut several slices (about half) of the butter and place in 9×11 inch pan. Put half of your cooked noodles on top. Next, spread the cheese/sour cream mixture on the noodles. Then put the other half of the noodles on top of that. Use the rest of your stick of butter to slice off several more pieces on top of the noodles. Once you’ve done that, you are ready to put the spaghetti-meat sauce on top and just make sure to spread it all over. Pop it in the oven for about 25 minutes and then put the cheddar cheese on top and bake another 10 minutes or so. Mmmm. It’s like a lasagna for people who don’t like ricotta cheese. If you are in a rut and need a new dish, this is sure to please — and sure to feed — a lotta people.
